Raw - Corn Chowder with Lime Cream

Are you wondering what to do with all the fantastic corn coming in this summer? I encourage you to try this recipe. Great on a hot day. I spent the morning watching my son play baseball in the heat and this was a good lunch to have....

4 cups of corn kernals cut of the cob..(about 4 ears)
1 tsp garlic
1/2 teaspoon of dried thyme
1/2 teaspoon of sea salt
1/4 cup of extra-virgin olive oil
about 2 cups of water

Place all the ingredients your food processor or your Blendtec and process on pulse untill it's a chunky chowder or if you like it smoother blend longer.

I also made a cashew cream recipe using:

1/2 cup raw cashews
little water and some lime juice, and cayenne for a kick and blended until it was the texture I liked. I added a dollop on top of the chowder and yummy! The cayenne really made it good.

The crackers I have are both good...the Mary's gone Crackers - Herb and the Exotic Rice Toast...purple rice and black sesame...both are gluten free and vegan. But not raw.

Give this a try..it's another quick and easy meal. I've finished half that bowl, and I'm feeling satisfied.

Almond Cacoa Raw Cake...

This raw treat has such a great flavor...The citrus zest and the cacao....what a combo!

Here is the original recipe I was forwarded from Celia, and she found it on: http://happyhealthyliving.wordpress.com/2010/01/28/cocoa-almondcake/

I only had to add more almond meal to the topping...it was too thin, but that could have been due to the amount of juice in my lemon. At first I thought that the olive oil in the topping would interfere with the sweetness and would have been better with coconut oil, but I do like the olive oil in it. The lemon juice cuts through it and gives it such a healthy taste. I also used honey...I've decided not to use agave anymore.

The only fresh fruit I had was the kiwi, strawberries and blackberries...Her cake was much prettier...I wish I had some star fruit...wouldn't that make a nice Forth of July cake?... Also, next time I may use soaked cashews for the topping to give it a creamier and lighter color...

I encourage you to try this...it was fun, easy and so yummy!

Daikon Salad and Daikons health benefits

Before I post the recipe I wanted to post the benefits of  daikon and a little testimony about my sister, who passed away at 54 of cancer.

Below is an article of the health benefits of daikon...but first let me share a little about my sister Colleen.
When my sister had her cancer 27+ yrs ago, she was given only 6 months to live. She beat it, using the Micro-biotic diet. She improved so fast that she knew she was onto something of truth, and she pursued the micro-biotic diet further and went to go see Michio Kushi in Boston a number of times. She would come home and tell me the wisdom this man had, and how much he could tell about her by just looking into her eyes and her skin tone. Anyway, one of the many things he told her to do was to have fermented daikon after every meal.
I remember sharing after every meal with her a few daikon pickles. It became something I looked forward to with her. Along with the Komchee twig tea and the miso soups. She beat the cancer then, changing her diet and lifestyle. Her improvement amazed her medical doctors. She lived another 25 years, cancer free.
Keeping it brief, Colleen remarried and her new husband liked to cook and he entertained alot and liked going out to eat as well. The last four years of my sister's life, she also started eating this way, more so, then the micro-biotic diet that she had been eating. The cancer returned, well, I guess it never went away, she just was able to keep it still, untill she started eating the Western diet again. Which included alot of cookout, meats, and processed foods. So enjoy your daikon.....

Raw daikon is used throughout Japan to complement the taste of oily or raw foods and, more importantly, to aid in their digestion. Laboratory analysis has shown that the juice of raw daikon is abundant in digestive enzymes similar to those found in the human digestive tract. These enzymes - diastase, amylase, and esterase - help transform complex carbohydrates, fats, and proteins into their readily assimilable components. Traditional Japanese restaurants serve grated daikon (daikon oroshi) in tempura dip to help digest oils, or shredded daikon with raw fish to help digest the protein. Grated daikon is a wonderful aid to people with a weak digestive system. It is important, however, to use grated daikon immediately. In just thirty minutes nearly 50 percent of its enzymes are lost.

The enzymatic action of daikon juice has gained the attention of scientists in Japan. At Tokyo's College of Pharmacy, researchers have discovered that daikon juice actually inhibits the formation of dangerous chemicals in the body. Nitrosamines, a type of carcinogen, can form in the stomach from chemicals present in both natural and processed foods. Daikon juice contains substances identified as "phenolic compounds" that can block this potentially dangerous reaction. Thus, a diet including raw daikon may reduce the risk of cancer.

Daikon has also been shown to be effective as a diuretic and decongestant. As a diuretic, raw daikon promotes the discharge of excess water by the kidneys. The result is increased urination and gradual reduction of the swelling condition known as edema. As a decongestant, the enzymes in daikon juice seem to help dissolve mucus and phlegm in the respiratory system and facilitate their discharge from the body.

Daikon is high in vitamin C and folacin. Like its relatives broccoli, cabbage and kale, daikon is a cruciferous vegetable that offers cancer-protecting potential.

A few drops of soy sauce and a tablespoon of grated daikon is a macrobiotic treatment for helping the body discharge old animal protein and fats. Cooking daikon with a kombu broth is said to help the body eliminate excess dairy products. A tea brewed from daikon, shiitake and kombu has been used as a folk remedy to reduce fever.

Here is the recipe I used:
One good size daikon  and spiralized
One cucumber spiralized
Two small carrots shredded

I cheated today and used the below bottled dressing, by Organic Valley, Miso Ginger...but a good ginger dressing is very good on this.

Earth Day...What did you do?

Did you take a walk outside, preferably barefoot?

Did you take time to connect to the earth?

Did you smell a flower, see a new bloom?

Did you look into your pets eyes and see the love?

Did you plant a seed or a tree?

Did you say thanks to the Creator? The Creator of the Universe? The seas, the mountains and the place you call home?

It should be Earth Day everyday…we should all connect to the earth each and everyday. In fact, I believe we should walk outside barefoot everyday and sit in the sunshine for a few minutes each day for our health and wellbeing.

Did you know there were no recorded problems with the feet in biblical days? when they walked barefoot or in open sandals? ….the first problems started in the Renaissance era.

Benefits of walking barefoot:

Children who go barefoot, and are allowed to do so by their parents, have been seen to have lesser foot deformities, greater flexor strength and more feet agility. At the same time, they are able to spread their toes to a greater extent than others.

Those who walk with their shoes on encounter much more aches and pains in the body, as compared to the people who indulge in home bare foot walking.

Barefoot walking helps straighten out the toes of a person. At the same time, if you walk bare foot, even the lazy muscles of your feet are prompted to move and develop more, with the result that you have toned and much stronger foot muscles.

Walking barefoot helps the leg muscles pump blood back to the heart. This makes it beneficial for those who are suffering from the problem of varicose veins.

Walking barefoot helps relax tired feet.

Its beneficial for people suffering from flat feet, in many cases helping them overcome the problem altogether.

Walking barefoot in the summer season has been found to have a cooling effect on the body of a person, especially if he/she walks on morning grass, leaves or a piece of log in the garden.

In traditional exercises, like yoga, tai-chi and martial arts, it is believed that being barefoot helps a person absorb Chi, the life-force energy. As you walk with your feet bare, you increase your vitality. At the same time, it helps you think clearly and increases your capacity to work.

Walking barefoot in your garden or the local park will help you feel closer to the nature. This will not only take your mind off everyday tensions and relax your body, but also rejuvenate your mind and boost your energy levels.

Benefits of Sunshine:

Sunshine stimulates the production of serotonin which promotes a good mental outlook and fights Seasonal Affective Disorder. It also stimulates the pineal gland which produces melatonin. Melatonin is one of the chemicals that operates our bodies clocks and helps with sleep function. Ninety percent of our vitamin D comes from exposure to the sun.

Vitamin D

We can get vitamin D from food, but not enough for optimal health which is why supplementing our intake is necessary. What does vitamin D do for our bodies?

Most recent studies suggest that since vitamin D helps to lower blood cholesterol levels it is a factor in fighting heart disease.

Vitamin D is necessary for strong bones and teeth as it aids in the absorption of calcium

It also helps prevent certain cancers including lung, prostate, and maybe even certain skin cancers.

Sufficient vitamin D also regulates the immune system. One study saw a 70% reduction of colds in 3 years in participants given vitamin D supplements.

VitaminD may even help slow down the aging process. A study showed that the biological markers, called telomeres, were longer (a sign of being biologically younger and healthier) in participants with higher levels of vitamin D.

Sunshine is an important part of a healthy lifestyle. Like all activities, taking in the sun must be done in moderation. The best way to absorb it is without sunscreen so limit your exposure to short periods of time. The body takes in the sun’s goodness through any exposed skin area. The body can only store vitamin D for 60 days so regular exposure is called for.

Make it Earth Day Every Day for your health! Walk outside today and look at your gardens in your barefeet. Enjoy the sunshine for 15 minutes, while you say a prayer of Thanks.

Tell  your children, family and pets you love them....today!  Be thankful they are yours to love and nurture for this time here on earth.

Peace, Love and Health!

Improve Your Memory with Nutritional Dense Foods

Have you heard, Less is Best.....?

German scientists say their research shows that the less you eat, the better your memory. Munster University researchers took 50 “elderly” people and used them as test subjects.

They gave them a memory test. Then put them on a diet which reduced their caloric intake by a third. Then they gave them another memory test.

Other research has indicated that a calorie-restricted diet is good for all sorts of things.

The idea goes: the fewer calories you take in, the fewer diseases you get, and the longer you live. The problem is that no one knows how, or why, it works but many ideas on why.

Hmmmm, could this be because most of the high calorie stuff is junk. Few vitamins, minerals, no enzymes, and lots of bad fats. Dead empty foods filled with additives that aren't even food. Any combination of the above puts a huge physical stress on the body.

Stress of any kind will cause disease, weaken and kill.

What you really need to focus on is nutrition, not calories. That’s why I promote more raw, organic, living foods lifestyle. If you can't go all raw, just increase the amount....eat raw for breakfast and lunch, and limit your animal foods, if not eliminate it. If you include animal foods, make sure it's organic, free-range, grass-fed no anti-biotic, growth hormones etc...

I thought today I'd share with you some of the healthy personal care items I have been using for a few months now. Infact, it's time for me to reorder!  I found out about it by a friend of mine and told her I was willing to give them a try, but wouldn't promise a reorder. So far I've liked everything I've tried and have waited too long to reoder and will have to do without the products for a few days until my order comes in.

Lemon & Coriander Deodorant was one of the products I really wanted to try.
Finding a healthy alternative was hard and almost imposible , and it wasn't something I could find locally.. Sure I could have used all the home recipes including baking soda and essential oils, diluted vodka or witch hazel, but nothing really worked. Neal Yards Remedies, Lemon & Coriander Deodorant did work. No wonder it was awarded the Beauty With a Conscience Award for being the purest and most effective products in their category.

You may be asking what is BEAUTY WITH A CONSCIENCE AWARDS and what sets it apart from similar reviews? The answer lies in their high standards for safety and purity. They don’t allow or test any products that contain known hormone disruptors, carcinogens, skin or respiratory irritants, or environmental hazards—we’re talking about parabens, phthalates, synthetic dyes and fragrances, sulfates, petroleum derivatives, and a host of harmful ingredients often found in conventional beauty products.

For more information regarding these great personal care products you can go to my website  at

They have skin care, hair care, body care, essential oils and blends and more....ingredients are mostly all grown on their own gardens in England.
